To celebrate the launch of the DoubleTree by
Hilton Swindon’s new menu, the team are giving foodies everywhere the chance to
make its popular Superfood Salad at home.
Adam Flint, general manager of DoubleTree by
Hilton Swindon, says: “With the heatwave showing no sign of stopping, this is
the perfect dish for 30-degree days. A light meal for a summer afternoon or
evening, it is also great as a healthy alternative for anyone looking to eat
clean.”
How to
make the Hilton’s signature Superfood Salad
Add the following ingredients to your shopping
list:
• 50 grams of quinoa
• 25 grams of broad beans
• 15 grams of pomegranate seeds
• 30 grams of broccoli florets
• 2 grams of chopped parsley
• 60 grams of sweet potato
• 10 grams of almonds
• 5 grams of pea shoots
• One gem lettuce, chopped
• 50ml honey mustard dressing
• A pinch of salt & pepper
If you don’t have honey mustard dressing, you
can make your own with 60 grams of mayonnaise, 15 grams of grain mustard, 5
grams of French mustard, 20 grams of honey, and a 5ml splash of cider Vinegar.
Before you start, set your oven to 200 degrees
in order to roast the sweet potato thoroughly.
Firstly, you’ll need to mix all the sauce
ingredients together to make the honey mustard dressing. Let it sit in the
fridge with some cling film over the top of the bowl. Bring the quinoa and
broccoli to boil while you dice and season the sweet potato. Transfer the
seasoned sweet potato into a deep roasting dish and pop it in the oven.
Once everything has been boiled and roasted
sufficiently, place the quinoa in your mixing bowl. Add the rest of the
ingredients: the broccoli, sweet potato, pomegranate seeds, chopped gem
lettuce, broad beans and chopped parsley. Toss the salad with the honey mustard
dressing.
Place in your salad serving bowl, garnish it
with pea shoots and present as shown in the photo.
