A good smash burger involves pressing ground meat and heating it quickly, creating a crispy, flavoursome crust while leaving the interior moist and juicy. Traditionally made by a chef using a spatula or bacon press to squash the meat, Taylor’s clamshell grills offer a simple way to make the process virtually automatic.
Whereas a normal grill features one heating element beneath the food, Taylor’s clamshell grill has a heated top platen, too, allowing for simultaneous cooking on both sides. This reduces cooking times by up to 66%, ensuring food remains moist and succulent while producing an even char.
Taylor clamshell grills have a programmable control system that allows operators to define up to 72 menu items per cooking zone. These cooking zones can be controlled independently, letting different items be cooked together without cross-contamination. The zones can also be shut down during quieter times, helping to reduce energy consumption. The one touch menu automatically sets the desired time, temperature and the gap between the platen and the griddle, with a powerful air cylinder system that moves the clamshell into position – creating the perfect squeeze for the smashed burger! If the unit loses power or detects an obstruction it will automatically open, helping to make a safer working environment for staff. New recipes can easily be added via USB, making it easy to update menus.
Taylor clamshell grills are available in single, double and triple cookzone versions, as well as versions with one or two platens and a traditional griddle to provide extra versatility. Robustly constructed from stainless steel, they are mounted on lockable castors enabling easy cleaning and moving as required.
Each lower cooking area has three heating elements and two per platen, ensuring even temperatures and quick heat gain and recovery. The lower cooking surface has an etched product placement guide, helping to ensure perfect two-sided cooking every time.
