Winterhalter’s flexible MT series finds a home at Mansion House

 

Based right in the heart of the City of London, Mansion House has been one of the capital’s most important buildings since it was built in 1740.  Besides being the official residence of the Lord Mayor of London it is the location of some of the City’s formal official functions, as well as a popular event space throughout the year.

 

Responsibility for food at Mansion House is handled by leading catering firm Social Pantry. It’s a diverse and demanding job, which requires high standards and fast turnaround. “We have quite a few different menus,” says Adam Hunt, general manager at Mansion House. “These include state, livery and commercial banquets, as well as general event catering. It’s fine dining but being quick and efficient is a huge priority for us.” Being able to meet the needs of guests with different dietary requirements is also vital. “For, say, a state banquet of around 400 covers, I would expect that around 200 of those would require different meal options,” says Adam. “For example, halal food, and also to take account of a huge range of different allergens. We need everything we send out of the kitchen to be safe.”

 

Keeping an operation like this running smoothly requires the ability to clean plates quickly and to the highest standards, which is why a dishwasher from Winterhalter’s MT Series was recently installed in Mansion House’s kitchen. The team worked with expert designers at Ifse to identify the right equipment for the location.

 

“Kitchen space is limited here,” explains Nathaniel Youngbrocks, operations attendant at Mansion House. “It’s a Grade 1 listed building, so we’re constrained by how much we can alter the fabric.  Also, it wasn’t designed with the needs of modern ventilation in mind, so we needed something that could fit into the space we have and that didn’t need additional ventilation.”

 

The MT Series was designed as a versatile modular system that allows machines to be configured to meet specific specifications, including corner modules, and comes with a range of options. The new MT at Mansion House was fitted with a ClimatePlus heat pump, that recovers heat from steam to help heat up incoming wash water.  This means there’s no steam emitted out of the machine during operation. As well as removing the need for extra ventilation this makes a significant reduction in the unit’s energy consumption. “The staff appreciate it, too, because the steam-free environment is more pleasant to work in,” says Nathaniel.

 

Mansion House’s MT series was designed to make their KP’s life as easy as possible. Items can be pre-rinsed in the sink before being immediately loaded into racks, with the inlet to the machine next to the sink. Racks are then deposited onto an outlet table once the wash process is finished, allowing them to be returned to service immediately.

 

“With our old dishwasher, we’d regularly have to rewash items as they came out,” says Adam. “The Winterhalter has reduced that enormously, which saves a lot of time and money.”

 

The MT is also designed to be easy to use. Programmed through single-button operation on a touchscreen panel, it uses simple, language-neutral icons. “Winterhalter trained our KP Abraham in how to use it,” says Adam. “He picked it up immediately, and it’s simple enough that even I can understand it!”

 

Nathaniel is also impressed by Connected Wash, Winterhalter’s connectivity and data capture tool. “We can monitor everything going on with the machine, how much water it uses, how often it’s being used and if there’s anything that needs fixing,” he says.

 

“The City of London Corporation has very ambitious targets for sustainability,” says Adam. “Having equipment that can give us accurate information about resource consumption is very important in meeting these targets.”

 

Despite the complexity of Mansion House’s needs for a dishwasher, Winterhalter was able to deliver something that meets all of them, thanks to the adaptability of the MT series.
