The beans are aged (still green) in ex-Filey Bay Flagship Whisky casks for twenty days before being roasted. A medium roasted profile yielded the best results balancing the green apple acidity with a delightful caramel sweetness, along with hints of chocolate and citrus fruit notes, all wrapped up in a prominent whisky aroma to finish. |
