Yorkshire businesses collaborate to develop a unique charcuterie product
Two Yorkshire businesses have collaborated to create a unique salami.
Ilkley-based Lishman's Butchers and Charcutiers has created a unique salami usingFiley Bay STR Finish single malt whiskyfrom Spirit of Yorkshire Distillery at Hunmanby.
Jenni Ashwood, marketing director at Spirit of Yorkshire, said: "Lishman's award-winning range of charcuterie was inspired by holidays to Tuscany where the Lishmans tasted charcuterie and visited local producers. Over the years, they have developed recipes combining traditional techniques with local produce, and we're proud to have collaborated to produce Pork and Filey Bay Whisky Salami.
"Here at Spirit of Yorkshire Distillery, we're always looking for innovative ways to showcase the unique character of our single malt whisky.This winter salami is a delicious blend of Yorkshire Pork and Yorkshire whisky and a hint of Tellicherry pepper for warmth."
Lishman's Pork and Filey Bay Whisky Salami costs £6 and is available online from lishmanbutchers.co.uk.
Filey Bay STR Finishhas a first maturation in ex-bourbon casks (bringing creamy notes to the light and fruity spirit style), before ‘finishing' in another cask type. STR casks are ex-red wine casks that have been shaved, toasted and recharred, creating the perfect environment for their light and creamy whisky to draw out the delicious red fruit flavours from the wood.
Spirit of Yorkshire is a true field-to-bottle distillery and one of only a handful of distilleries that use 100% homegrown barley to produce single malt whisky. Filey Bay single malt whisky is available throughout the UK and in a growing number of export markets.
