Spirit of Yorkshirelaunches eagerly awaited special releases
Distillers at Yorkshire's first single malt whisky distillery have revealed details of their latest bottlings.
For their last releases before Christmas, Spirit of Yorkshire Distillery has launched limited edition bottles of Filey Bay Port Finish Batch #1 and Filey Bay Sherry Cask Reserve #3.
Filey Bay Port Finish Batch #1spent its first maturation in ex-Bourbon casks which were filled in mid-2017 before being re-racked into fresh ex-Ruby Port casks in late 2020 for a secondary maturation of two years: much longer than previous Filey Bay ‘finished' whiskies.
Made up from just 10 casks, the release is a much smaller batch than other ‘finished' whiskies, with only 3,300 bottles available.
"Ruby Port casks can be hard to source but give the spirit a fresher and fruitier character than the heavier, richer, better-known Tawny Port casks.The jammy, fruity nature of Ruby Port really complements our whisky. I particularly like how the vanilla and toffee notes from the ex-bourbon work with the light spices and sweet fruits from the port wood in this release.Whisky is a game of patience, and this release proves it. It's been a long time coming but definitely worth waiting for," said Spirit of Yorkshire's whisky director, Joe Clark.

Filey Bay Sherry Cask Reserve #3is the third of the distillery's annual autumn Sherry Cask Reserve series and is a marriage of five ex-Fino casks from the warehouse. Three casks were filled with the distillery's heavier pot distillate, and two held the lighter, fruitier column distillate.
"Naturally delicate, dry and a bit spicy, ex-Fino casks are a rarity in whisky production with richer styles of sherry casks often favoured by many distilleries. Despite being a light dry style of sherry, these casks have brought a deep rich colour and a range of complex fruity flavours to our whisky, working extremely well with our light and fruity style of new make. We're really excited by how unusual and distinctive this release tastes," said Clark.

A true field-to-bottle distillery, Spirit of Yorkshire is one of only a handful of distilleries that uses 100% homegrown barley to produce Filey Bay single malt whisky. It has aprogressive way of distilling and uses both traditional pot stills and a copper rectifying column to create two distinct distillate styles that are casked separately, and then married together after maturation to create unique whiskies, as in Sherry Cask Reserve #3.
Filey Bay single malt whisky is now available throughout the UK and in a growing number of export markets.
