Energy costs are soaring, threatening the very existence of some hospitality operations. Those in it for the long haul are looking at ways to cut costs for a sustainable future. Buying energy-saving equipment is no longer an optional extra, it’s a must to soften the blow of energy price hikes.

Alto-Shaam’s cook and hold ovens from FEM (Foodservice Equipment Marketing) lower energy costs with energy-efficient operation. Their ventless, waterless design also lowers costs and negates the need for water hook-ups or traditional kitchen hoods.  The ovens offer labour-free overnight cooking and effortless operation, reducing labour costs and increasing productivity. They cook to a precise temperature and hold food for hours to keep it juicy and tender.

Cooking is controlled by time or by probes using Simple or Deluxe controls, depending on the model. The probes sense internal product temperature and automatically switch the oven from cook to hold mode once parameters have been reached. Advanced but easy to use controls feature an intuitive, user-friendly interface, while programmable recipes ensure consistency with each cook. Alto-Shaam’s gentle Halo Heat technology gives a better quality product at a lower cost than conventional cook and hold ovens.

The Deluxe models also include the ChefLinc remote oven management system, which provides real time data to give users complete control of the ovens, menus and business. Operators can seamlessly create, manage and distribute recipes to ovens in multiple locations through the cloud. Meanwhile, the SureTemp heat recovery system compensates for any heat loss whenever the oven door is opened.  It also provides an audible reminder if the door is left open for more than three minutes. A HACCP data logger automatically tracks food temperature readings and operation mode by date and time, all of which is also downloadable onto a USB flash drive.

There are six models in the range – the16kg countertop model, the 18kg, 45kg and 54kg models that can be stacked where space is tight or placed under counters, and the larger 90kg and 108kg models with two independent oven compartments giving increased cooking options and flexibility. For display, and front-of-house locations there are glass door options with adjustable internal LED lighting.
