FEM’s latest Alto-Shaam cook and hold smoker ovens
add flavour while reducing cost
Foodservice Equipment Marketing has introduced Alto-Shaam’s new range of simple control cook and hold smoker ovens, which provide an effortless way to infuse flavour into food with no artificial additives or added sodium, fats or sugar. Designed to be easy to use, they enable chefs to add fuss-free tasty signature dishes by slowly cooking food with precision, so it is naturally tenderised, with minimal shrinkage and a controlled smoke flavour intensity.
The key is Alto-Shaam’s
innovative Halo Heat technology. Fanless and waterless, Halo Heat eliminates
the forced air and harsh heating that degrades food quality by overcooking and
drying out. Gentle, radiant heat provides greater yields compared to barbecues
and conventional smoking methods. A sealed, static smoking and cooking
environment traps the food’s natural flavour and juices – reducing shrinkage,
improving food quality, enhancing smoke flavour and extending hold times. For a
true, authentic flavour profile real wood chips are used.
All in all, the Alto-Shaam cook and hold smoker
ovens produce a better quality product at a lower cost. One hour in the cook and
hold smoker oven is equivalent to one to two days of dry aging. The ovens keep
the smoked product at its perfect serving temperature and hold it for hours
with no loss of quality. Smoking can be either hot or cold.
These new simple control models feature
icon-based, touch controls for smoking, cooking and holding, and a knob to set
temperatures. Cooking by time or temperature probe, they store up to eight
programmable recipes. The oven senses internal product temperature or time and
automatically converts from cook mode to hold mode once set parameters have
been reached. Up to six probes are available per chamber in deluxe control models
which are also available.
Deluxe models feature Alto-Shaams’ ChefLinc with
an easy-to-use dashboard to streamline processes and seamlessly push and pull
recipes remotely using the recipe management system. Data-driven insights, oven
monitoring, service support and more are all available through the platform. The
data logger automatically tracks food temperature readings and operation mode
by date and time. All can be downloaded onto a USB flash drive.
The SureTemp Heat Recovery system ensures
immediate thermal compensation for any heat loss whenever the door is opened.
An audible reminder sounds if the door is left open for more than three
minutes. There is the option for overnight cooking so freshly smoked items are
ready each morning.
Altogether there are four models in the range, two
single and two double oven cabinets – each available with either simple or
deluxe controls. The smallest is the range is the 750-SK/SX simple control smoker
ovenwith a 45kg product capacity that holds nine 65mm deep 1/1 GN pans.

the 750-SK/SX model.
