FEM’s new Alto-Shaam simple and deluxe control cook and hold oven range includes double cooking compartment models

Alto-Shaam cook and hold ovens are invaluable to professional foodservice operations. Compared to conventional cooking methods and other low temperature ovens, the Alto-Shaam ovens with Halo Heat deliver higher yields and better food quality. Food is cooked gently and evenly. And because there is no harsh heat, forced air, or added humidity which can degrade food quality, less product is wasted.Food comes out full of flavour and meat is naturally tenderised with minimal shrinkage.

FEM (Foodservice Equipment Marketing) has now introduced the new-look simple and deluxe control range of Alto-Shaam cook and hold ovens. The range includes both single and double compartment models, with the double models offing twice the cooking and holding capacity.Theirventless design means no oven hood or outside venting is required making them straight-forward to install as well as cutting operating costs.

Easy to use, the cook and hold ovens cut down on the need for multiple pieces of equipment. They can roast, proof, braise, reheat, ferment, sous-vide, hold and more in the same cabinet with set-and-forget controls. Overnight cooking frees up other equipment and food costs can be cut by up to 15-20% with the Halo Heat technology reducing shrinkage.

Cooking can be controlled by time or temperature probe with simple or deluxe controls. The oven senses internal product temperature or time and automatically converts from cook mode to hold mode once set parameters have been reached. Meanwhile, the SureTemp heat recovery system on deluxe models ensures immediate thermal compensation for any heat loss whenever the door is opened. An audible reminder sounds if the door is left open for more than three minutes.

The advanced controls on the striking new models are designed intentionally simple, featuring an intuitive, user-friendly interface and programmable recipes to ensure consistency with each cook.

Deluxe models are also compatible with ChefLinc, Alto-Shaam’s cloud-based remote oven management system, which features an easy-to-use dashboard to streamline processes, reduce labour and maximise profits. It provides operators with complete control of their ovens, menus and business with real-time data at their fingertips. Users can seamlessly push and pull recipes with a recipe management system and access data-driven insights, oven monitoring, service support and more in multiple locations through the cloud.

HACCP compliance is also simplified with the deluxe models, as there is no need to manually log temperatures each hour. The onboard data logger automatically tracks food temperature readings and operation mode by date and time – all downloadable onto a USB flash drive.

The new models are the single compartment 300-TH, with capacities of one GN 1/1 100mm pan or three GN 1/1 65mm pans, and the 500-TH, which can hold three GN 1/1 100mm pans or five GN 1/1 65mm pans. The double compartment models are the 1200-TH, holding five GN 1/1 100mm pans or eight GN 1/1 65mm pans, and the largest model, the 1750-TH, with a massive capacity of six GN 1/1 100mm pans or ten GN 1/1 65mm pans. All new models are available with either simple or deluxe controls.
