Yorkshire distillery launches new single malt whisky
The team at Yorkshire's first single malt whisky distillery have released their latest bottling.
Filey Bay Moscatel Finish Batch#2 from Hunmanby based Spirit of Yorkshire Distillery is a single malt whisky that has been aged in bourbon casks and ‘finished' in Moscatel sherry casks.
Following the launch of Filey Bay Moscatel Finish Batch#1 in March 2020, the latest expression has benefitted from an additional 18 months in casks that held Moscatel sherry for a decade before being used for whisky maturation.
Of the launch Spirit of Yorkshire's Whisky Director, Joe Clark said: "In true evolutionary fashion, the extra time this whisky has spent in cask has encouraged a more rounded and mellow dram whilst retaining our soft and sweet signature style.
"Batch #2 is a more complex whisky with more fruit and sweet spices than Batch #1 and a richer mouthfeel.It's soft, sweet and fruity with flavours of orange, honey, dried fruits and cocoa."
"The release of Filey Bay Moscatel Finish Batch #2 is a great insight for what is to come as our whisky continues to mature. It's exciting to see the progression of flavours the spirit has received from the casks with age on its side," added Spirit of Yorkshire's Director and Co-Founder, David Thompson.
Filey Bay Moscatel Finish Batch #2, 46% ABV costs £60 and is available from the distillery shop, online at spiritofyorkshire.com and from selected specialist retailers nationwide. In addition, there are still a limited number of bottles of Filey Bay Moscatel Finish Batch #1that was awarded a gold medal in this year's World Whisky Awards available for sale.
Spirit of Yorkshire Distillery is Yorkshire's first single malt whisky distillery and is one of only a handful of distilleries that grows the barley for whisky production. It is a collaboration between farmer and brewer, Tom Mellor from Wold Top Brewery and business partner, David Thompson.
