North Yorkshire single malt whisky distillery launches its second ‘finished' release

 

The team at Yorkshire's first whisky distillery are celebrating the easing of lockdown measures with the release of their second ‘finished' single malt whisky.

 

Filey Bay STR Finish is Spirit of Yorkshire Distillery's fourth whisky and follows the success of Filey Bay First and Second Releases in 2019 and Filey Bay Moscatel Finish earlier this year.

 

Of the launch, David Thompson, Co-Founder at Hunmanby based Spirit of Yorkshire Distillery said: "Although we haven't been open for visitors during lockdown, the distillery has been operating as normal and we have been able to distil, nose and sample our whisky safely.

 

"Distilled in 2016, Filey Bay STR Finish is a field to bottle single malt that spent years maturing in bourbon casks before transferring to shaved, toasted and re-charred (STR) red wine barriques, which came from Rioja vineyards in Spain, to be finished."

 

Spirit of Yorkshire's Whisky Director, Joe Clark is delighted with the flavour profile of the distillery's latest release: "Filey Bay STR Finish is totally different from anything we've released so far. It takes the citrus and caramel flavours from the bourbon casks and weaves them with the red fruits of the Rioja barriques. This creates a complex whisky with spice and depth that's underpinned by our light and fruity house-style."

 

Filey Bay STR Finish is limited to 6,000 70cl bottles and costs £60. It is available to pre-order from the distillery shop and online at  spiritofyorkshire.com for delivery towards the end of July. The distillery shop is open from 10 am to 4pm Monday to Saturday and 10am to 3pm on Sundays.

 

Spirit of Yorkshire was launched in 2016 and is a collaboration between farmer and brewer, Tom Mellor from Wold Top Brewery and business partner, David Thompson. The STR cask type was pioneered by the late Dr. Jim Swan, arevered industry expert and a master in whisky maturation,who mentored the pair as they set up the distillery.

  3. The STR is a very advanced cask type pioneered by our consultant the late, Dr. Jim Swan. Jim was a revered industry expert and a real master in whisky maturation working with some of the best upcoming distilleries of the last 15-20 years.
    Our STR casks have held Rioja wine for around 5 years and after disgorging at the bodega have then gone back to the cooperage in Jerez to undergo a reconditioning process. The words STR refer to Shaving, Toasting and Re-charring the casks, resulting in a cask that delivers a really beautiful and balanced maturation. Retaining much of the fruit-driven flavours from the wine but also allowing sweetness and spice from the oak to shine through while crucially not overwhelming the spirit.
