Tewkesbury Park Unveils Brand-New Restaurant - Mint

November2018- Patrick Jones, general manager of Tewkesbury Park, is pleased to announce the completion of Mint, the hotel's brand-new destination restaurant, and the concluding addition of what has been a four-year major works programme, costing nearly £10 million.

Luxuriously appointed by reputed local interior designer, ADS Design, who have cleverly drawn upon the restaurant's name, Mint, to create a fresh and bright décor. Weaving in verdant undertones of limes, peppermints and brilliant greens, the name Mint has been chosen not only to highlight its refreshing stylish interior, but also to reflect the light and fresh cuisine which will be served.  Luxurious banquettes interweave with chairs and feasting tables to ensure the dining experience will be a relaxing and sociable affair.  A glass and antique brass balustrade that overlooks the restaurant brings a traditional touch to what is otherwise a contemporary feel. Clusters of fresh potted herbs peppered around the restaurant exude a fresh aroma and offer another nod to the restaurant's name.

A stylish aluminium-topped sharing table will double up as a breakfast bar, ensuring the restaurant is transformed effortlessly from atmospheric evening dining, to one which greets guests with a "how do you like your eggs in the morning" welcome. The relaxed, fresh design of the area will ensure that all diners feel at home, whether they're a corporate guest after a quick bite before rushing off for a meeting, or a couple looking for an informal, leisurely dining experience.

The fabulously fresh food offering is directed by head chef Anuj Thakur, who works particularly closely with the seasons, and takes advantage of the finest ingredients from local producers.  Changing eight times a year, the menu will carry through the mint theme, but will feature the season's relevant herb, from "Winter Mint" featuring mint and sage, to "Early Summer Mint" with mint and lavender. Menus will be presented to guests on thick cards, clipped with original antique brass bulldog clips on hand-made wooden boards, that have been crafted from old wooden wine crates by a local cabinet maker.

Besides seasonality, Anuj's menu provides a refreshing selection of light and clean cuisine with a great balance of dishes - think braised shin of Herefordshire beef with crispy potatoes, salsify, chestnuts, Brussels sprouts and a beef jus; a roasted aubergine, chickpea & quinoa ragout with tomato korma sauce and coconut potatoes; or pan-seared Atlantic cod with purple potatoes, curly cale and a chorizo & mussel broth. An array of fish and plant-based options reflect the growing desire for healthier lifestyles, with the menu as a whole being paired beautifully with the hotel's varied and interesting selection of wine and bubbles.

With the new restaurant, comes a brand-new brunch concept which will be available every Saturday and Sunday from 11.00am - 2.00pm. Serving a range of brunch favourites, as well as lunchtime dishes, it's hoped brunch will be a hit with local residents, as well as hotel guests.
