Challenge the way you cook sausages with MOR's delicious lower fat recipes.
 
 Eating the food you love doesn't have to mean compromising on your healthy goals.

 

Sausages can seem like a no-go zone when you're trying to eat healthily; they're usually high in saturated fat, and are often cooked as part of comforting, but less nutritious, meals. But with MOR's unique sausages and lower fat recipes - developed by our own development chef - we've created two mouthwateringly delicious, healthy meals that you can have on the table in 30 minutes.

 

MOR Sausages are made with distinct blends of high-quality British meat and vegetables, herbs, and spices. They contain far less fat than traditional pork sausages but lots more taste, with beautifully varied flavours that make them perfect for creating carefully balanced meals you can't wait to eat.

 

To see for yourself, try our recipe for Chicken Sausage Caesar Salad. Made with MOR Chicken, Sundried Tomato & Basil Chipolatas it's light, fresh, and simple, perfect for a summer day; you could even grill the sausages on the barbecue. We've also included a recipe for the Caesar dressing, though a bottle from the supermarket - or a recipe of your own - will work just as well.

 

Alternatively, kick dinner time up a notch with our nutritious Korean Style Sausage Stir Fryrecipe.We make it with MOR Super Green Veg & Lentil Sausages, fresh Asian vegetables, zingy chillies, and fragrant coriander; it's a real crowd pleaser, and it's good for you, too.

 

Chicken Sausage Caesar

MOR Chicken, Sundried Tomato & Basil Chipolatas in a Caesar salad, served with homemade dressing and ciabatta croutons.

Cooking time:Approx 15 minutes

Ingredients

1 pack MOR Chicken, Sundried Tomato & Basil Chipolatas

4 heads baby gem lettuce, roughly chopped

50g anchovies

50g parmesan shavings

1 tbsp chopped sun-blushed tomatoes

½ small white ciabatta loaf

3 tbsp olive oil

1 tsp Maldon sea salt

1 clove garlic

100ml Caesar dressing


Caesar dressing

2 cloves garlic, finely chopped

2 anchovies, finely chopped

½ lemon, juiced

½ tbsp grated parmesan

1 tsp Dijon mustard

1 tsp Worcestershire sauce

2 tbsp mayonnaise

 

Method

1. Grill the sausages as per pack instructions, turning once, then allow them to cool slightly before slicing each into four pieces. Next, set the oven to 180°C.

2. Make the croutons. Start by slicing the ciabatta as thinly as possible with a serrated bread knife. Pour the olive oil into a flat baking tray, sprinkle with sea salt, then crush the garlic with your fingers and rub all over the tray.

3. Lay out the ciabatta slices evenly on the tray. Once the oven's reached temperature, pop in the tray and bake the ciabatta for 7 to 8 minutes until starting to colour. Remove the tray and allow the croutons to cool on kitchen paper - this'll help to absorb any excess oil.

4. If you're making your own dressing, mix together the garlic, anchovies, lemon juice, mustard and Worcestershire sauce in a bowl.Whisk in the mayonnaise and parmesan to finish.

5. Grab a large salad bowl and toss the lettuce with the sausages, anchovies, tomatoes, parmesan, croutons, and dressing. Mix well, then serve immediately.

 

Chef's tips

 

  • Ciabatta's far easier to slice when frozen, so stick it in the freezer a few hours before you start cooking.

  • Can't find marinated anchovies? That's not a problem; use tinned salted anchovies instead.

  • If you don't use all the dressing, it'll keep in the fridge for up to a week.

  • We've used baby gem lettuce, but if you like, you can swap this for half a head of cos lettuce.

  
 
 

Korean Style Sausage Stir Fry

Korean-inspired stir fry with Asian vegetables, chilli, and MOR Super Green Veg & Lentil Sausages.

Cooking time:Approx 20 minutes

 

Ingredients

1 pack MOR Super Green Veg & Lentil Sausages

1 tbsp vegetable oil

1 tbsp dark soy sauce

2 tbsp rice wine

½ tbsp cornflour

2 tbsp water

150g beansprouts

2 heads pak choi, cut into strips

2 small fresh chillies, finely sliced

3 spring onions, cut into strips

1 garlic clove, finely sliced

1 small thumb of ginger, cut into fine strips

1 tbsp freshly chopped coriander

1 tbsp sesame seeds

 

Method

1. In a small bowl, stir together the cornflour, water, soy sauce and rice wine to form a thin paste - add a little more water if you don't get the right consistency.

2. Heat the sesame seeds in a dry frying pan over a moderate heat until they begin to ‘pop'. Stir until golden, remove from the heat, and put to one side.

3. Grill the sausages as per pack instructions, turning once, then allow them to cool slightly before slicing thinly.

4. Put a wok over a high heat, pour in the oil and immediately add the ginger, chilli, spring onion and garlic, followed by the pak choi and beansprouts. Stir fry for a few minutes, and be careful not to burn the garlic! 

5. Add the sliced sausages and rice wine mix to the pan and stir until well combined.

6. Remove from the heat and garnish with the coriander and toasted sesame seeds. Serve with steamed Jasmine rice or, if you prefer, egg noodles.

Chef's tips

  • Don't worry if you can't find any rice wine. Just swap this for a teaspoon of honey.

  • This recipe's great for using up leftover vegetables like sugarsnap peas or peppers. Simply add them at the same time as the pak choi for a healthy boost.
