Launches Fish Friday Masterclass

March 2017- Renowned throughout the Caribbean, Fish Friday is celebrated in various guises, Antigua has its own Fish Fry every Friday at Nelson's Docks. However, besides returning home with a good flavour of Antigua's culture, Keyonna Beach wants their guests to return home with a good grasp of the cuisine. So the team at the resort have created the Fish Friday Masterclass. More than a cooking class, the experience begins with greeting local fisherman and personality, Red Dog, with his catch on Keyonna's Beach. The Chef will select the best of the catch and will then proceed to give an interactive masterclass on the resort's terrace - the class is complimentary.

Chef will create a selection of dishes on the day, depending on the fish caught, ensuring the course has a hint of spontaneity about it. Besides the demonstration, Chef will show guests the art of selecting a good fish, what they need to look for and what fish is suitable for certain types of dishes, the class will be fun and informative. Following the class, guests can select the dishes demonstrated for lunch - outlining the resort's fresh sea-to-table approach. Guests will also be given recipes too, so they can aim to re-create a little piece of Keyonna Beach.

Working very closely with local producers and suppliers, the resort provides all guests with a "Foods of Keyonna Beach" booklet explaining where the produce comes from, who the local heroes, supplying the resort are. Red Dog, Keyonna's fisherman is a devotee of all things fish and is rarely found on land. When not doing his day job, he can often be found diving, spear-fishing, or sport fishing.
