Yorkshire Wagyu recruits butcher for new on site butchery unit
Tibthorpe specialist beef business, The Yorkshire Wagyu Company has recruited a butcher for its new, on-farm butchery unit.
22 year old Aaron Marshall from Pocklington has been recruited to the new position of butcher at the fast growing business.
The Yorkshire Wagyu Company director, Jonathan Shepherd is delighted with the appointment: "The investment in the new butchery unit and employing Aaron has made a real difference to our business. We now have the facility and the resource to be able to react quickly to customers' needs and to butcher the Wagyu to individual chefs' requirements."
Marshall, who has worked in butchery since he was 14, is pleased with the move: "Wagyu is unlike any meat I've ever butchered before and I'm really enjoying the challenge. I'm a keen cook, so it also very interesting working up Wagyu recipe ideas and talking to chefs about how they want the meat butchering for their menus."
The new bespoke butchery and refrigeration unit was fabricated by Hull business, Fishers Engineering.
Wagyu beef originates from Japan where it is renowned for its exceptional flavour, melt in your mouth tenderness and its high levels of ‘good' monounsaturated fats that give the beef its characteristic marbling. ‘Wa' means things that are Japanese and ‘gyu' means cattle or beef.
